peppermint chocolate bark -

Christmas is just a few days away!! So much has happened over the last couple of months, which means I have a LOT I'd like to post about- as well as about a dozen sessions that still need blogged!

But, for now- we are enjoying Christmas in full swing over here! 
Recently, I came across a recipe for healthy, four ingredient peppermint chocolate bark and KNEW we needed to make it!! We revised it a little bit, and love how it turned out!!

The star- peppermint essential oil! So yummy + festive. 
Anyhow- to the good stuff! THE RECIPE: 

  • 3/4 cup brown rice cereal 
  • 1 1/2 cups chocolate chips
2 tsp coconut oil
4-6 drops peppermint essential oil

Melt chocolate chips and coconut oil. Stir in brown rice cereal, and peppermint oil. Pour unto lined tray and freeze! Once solid, remove and allow to thaw for 15 minutes or so and cut into squares. 
now, try to share. :) 

p.s. we used this yummy sprouted rice cereal which added extra crunch!
